Stuffed Tomatoes and Peppers
This a wonderful vegetarian dish filled with the flavor and aroma of the Mediterranean region where Lykovouno Olive Oil is produces. Serves 6 to 8.
Preparation time:2 hours
1 - 1 1/2 cups Lykovouno Olive Oil
7 medium green, red or yellow peppers
2 medium onions, finely chopped
1 bunch parsley, finely chopped
2 cups tomato juice
1 1/2 cup rice
One fennel bulb, finely chopped
1/4 tsp salt and pepper
Cut off the tops of the clean tomatoes and peppers and scoop out the interiors. Save the tomato pulp that is collected and puree in a food processor. Mix the rice, onion, parsley, fennel, tomato pulp, 1/2 cup olive oil, salt & pepper. Fill the tomatoes and peppers with the mixture, cover them with their tops and arrange them in a baking pan. Pour the tomato juice and the rest of the olive oil over them. Bake at 350 degrees for an hour and a half.
